Marinate time: 6 hours or overnight

Karina "Teriyaki Chicken with broccoli is a super easy chicken recipe cooked in only 10-minutes, with no marinating needed! Crispy and juicy skinless chicken thighs, stir-fried and swimming in a beautiful homemade teriyaki sauce"
4 x original recipe
2kg ripe tomatoes, finely chopped
1kg white sugar
16 long fresh red chillies, halved, seeded (if desired), thinly sliced
1 cup (250ml) white vinegar
8 tbsp (120ml) lime juice
4 garlic clove, crushed
4 tbsp (60ml) fish sauce
Combine tomato and sugar in a glass or ceramic bowl
Cover with plastic wrap and set aside for 6 hours or overnight
Transfer to a saucepan
Add chilli, vinegar, lime juice, garlic, salt and fish sauce and place over low heat
Cook, stirring, for 5 minutes or until sugar dissolves
Increase heat to high and bring to the boil
Reduce heat to low and cook, stirring occasionally, for 30 minutes or until jam thickens
Remove from heat and cool
Greg The recipe calls for long red chillies with or without seeds, without seeds would be very mild, it is still mild with the seeds. The comments below demonstrates some of my experimenting

with half a lime of lime zest 1 hour cooking time

One hour cooking time
with 90gm Bishop's Crown chillies with seeds from Deb
Also with half a lime of lime zest
45 minute cooking time
All with freshly squeezed lime juice

Definitely not as well cooked as previous batches
May need to increase simmer temperature
Katrina thinks more caramelisation required
Reduced another 15 minutes much better
